How long have you been catering weddings? In NM since 2013.
Have you done events at my location? We are affiliated with various venues and can make specific arrangements with those with which we do not have existing ties.
Are you licensed to serve alcohol? We have full Liquor licenses: we serve beer, wine and liquor.
Will you provide a banquet manager to coordinate the meal service? Yes, we have experienced Captains.
Do we have to work off a preset menu or can you create a custom menu? If I would like a special dish served, would you accommodate that? We can accommodate any food requests.
Do you use all fresh produce, meat, fish, etc.? Ours are the highest quality ingredients: Harris Farms beef, and duroc (heritage) pork. Can you source organic or sustainably farmed ingredients? We can always accommodate special requests if available in the marketplace.
Can you accommodate dietary restrictions, such as kosher, vegan, etc.? We can handle most dietary requests. We are unable to provide Kosher, directly.
What decor do you provide if any for appetizer stations or buffet tables? We always work to display our food as artfully and appetizingly as imaginable.
Can you do theme menus (e.g. BBQ, luau, etc.)? We can produce a broad variety of theme menus, including BBQ, luau and other foods cooked in the earth or replicated on indoor cooking devices.
What's the difference in cost between passed appetizers and an appetizer station? Cost of all food depends on menu selection. An appetizer station might require less staff cost.
What's the difference in price between a buffet and a sit-down meal? Price is determined mostly by menu selection, whether sit-down or buffet.
How much do you charge for children's meals? This depends on the number and ages of the children.
Do you do wedding cakes? If so is this included in the per-person meal price or is it extra?
Can you show me examples of cakes? We can show you photographs of cakes we’ve made for our clients.
If I decide not to serve cake, can you provide a dessert display instead? We can decide, with your input, what mix of desserts you want to offer your guests.
If we use an outside cake designer, do you charge a cake-cutting fee? We wouldn’t charge a fee if we are taking care of all the food, and you have a special baker.
Do you provide a food tasting and is there an extra charge for this? We can arrange tastings.
Do you provide linens, glassware, plates and flatware? If so what type/quality? We can arrange for all your rental needs.
What is your policy on cleanup? Who is responsible? We restore the venue to the same condition we find it.
If there is left over food from my event, what happens to it? It’s your food to do with as you please.
Do you provide alcoholic beverages and bartenders? Can you accommodate specialty cocktails? Our bar program is the best in the City. We can provide professional bartenders as well as a mix of beverages that stands heads and shoulders above the crowd.
What brands of alcohol will be served? We have everything you want.
Can we provide the alcohol and you provide the bar labor? Of course, you can provide your own beverages.
Do you charge a corkage fee if we provide our own wine or champagne? We charge for all staff, but we would charge no corkage fee.
How do you charge for alcoholic and non-alcoholic beverages? Per consumption or per person? We can work out the solution that best accommodates your needs.
Is the champagne toast after the ceremony included in your meal package or is it extra? You tell us the details of what you imagine and we’ll give you an overall price taking into account the mix of beverages.
Will your staff serve the wine with dinner? Yes, we offer the style of service, including wine service that you envision.
How long will alcohol be served? As long as you choose.
Is coffee and tea included with the per-person meal charge? What brands of each do you offer and do they include decaf and herbal tea options? We can include non-alcoholic beverages into the overall price. Our coffee is the Italian brand, Lavazza, regular and decaf. We can offer the herbal teas of your choice.
What is the ratio of servers to guests? This is determined by the style of service you have in mind: buffet, passed, seated and served, banquet style.
How will the servers be dressed? They would be dressed in black with aprons. They can wear ties and or vests.
How is your pricing broken down (e.g. food, bar, cake-cutting, tax, gratuity)? Food, beverage, service, rentals, and tax on food and beverage.
How much time do you require for setting up and breaking down my event, and are there fees for this? There are no extra fees, generally. Timing is determined by the size and complexity of your event. At least several hours are needed on both ends.
If my event runs longer than contracted, what are the overtime fees? We charge for our food and beverage so if additional time means more food and beverage, we charge for them. If our staff needs to be present longer, staff charges will increase accordingly.
What is the final date by which I can give you a final guaranteed guest count? We ask that the final count be agreed at least one week before the wedding.
What is your payment policy? 50% down to reserve the date and the balance is due before the event begins.
Once we book with you, how quickly can we expect a contract? And if we make changes to menu choices or other items, will you update us with revised estimate and contract? You’ll have a contract within two days. Changes made will be reflected in changes in the contract.
